Decaf has a reputation problem. And honestly, it's earned. Most decaf on the market is made with low-grade commodity beans processed with chemical solvents like methylene chloride or ethyl acetate. The decaffeination strips out not just the caffeine but most of the flavor compounds, too. What's left tastes flat, papery, and nothing like the real thing.

How Swiss Water Process Works
Green coffee beans are soaked in hot water, which draws out caffeine along with flavor compounds. That water, now called Green Coffee Extract, is passed through activated charcoal filters sized to trap caffeine molecules while letting the flavor compounds pass through. The flavor-rich, caffeine-free water is then used to soak the next batch of beans, extracting caffeine without stripping flavor. The process repeats until 99.9% of caffeine is removed. No chemicals touch the bean at any point.
It's slower and more expensive than solvent-based methods. That's why most mass-market decaf doesn't use it. We think it's worth it.
Best Brewing Methods for Decaf
Decaf brews the same as caffeinated coffee, same grind size, same ratios, same water temperature. A few tips specific to decaf:
- Drip coffee makers: The most forgiving method for decaf. Medium grind, standard ratio, fresh water. Our decaf roasts are calibrated for drip first.
- Pour-over: Works beautifully with lighter decaf roasts. The slower extraction highlights sweetness and origin character without bitterness.
- French press: Medium-dark decaf roasts hold up well to immersion brewing. Full body, low acidity, rich finish.
- Espresso: Decaf espresso pulls surprisingly well with Swiss Water Process beans. Look for our medium-dark decaf roasts for the best crema and shot stability.
- Cold brew: Decaf cold brew is an underrated move, smooth, chocolatey, zero caffeine, and perfect over ice at any hour. Coarse grind, 12-hour steep.
