Not all decaf is created equal. Most commercial decaf coffee is processed using chemical solvents, such as methylene chloride or ethyl acetate, to strip caffeine from the beans. The Swiss Water® Process uses no chemicals whatsoever. Just water, time, and osmosis.
Green coffee beans are soaked in hot water, which draws out both caffeine and flavor compounds. The caffeine is then filtered out using activated charcoal filters, and the flavor-rich water is used to soak the next batch of beans, this time removing only the caffeine while the flavor compounds remain in the bean.
