What Is Swiss Water® Process Decaf?

Not all decaf is created equal. Most commercial decaf coffee is processed using chemical solvents, such as methylene chloride or ethyl acetate, to strip caffeine from the beans. The Swiss Water® Process uses no chemicals whatsoever. Just water, time, and osmosis.

Green coffee beans are soaked in hot water, which draws out both caffeine and flavor compounds. The caffeine is then filtered out using activated charcoal filters, and the flavor-rich water is used to soak the next batch of beans, this time removing only the caffeine while the flavor compounds remain in the bean. The result is a decaf coffee that retains the full flavor profile of the original bean without any chemical residue.

Last Stop Decaf uses Swiss Water® Process decaf from single-origin Peru specialty-grade beans that were worth decaffeinating because they were genuinely great to start with.

Swiss Water® Process — certified and verified

The Swiss Water® Process is certified organic and verified 99.9% caffeine-free by independent laboratory testing. No chemicals. No compromise on flavor. Just clean, transparent decaffeination is the gold standard for specialty-grade decaf coffee worldwide.

How Swiss Water® Process Works

01
Green Coffee Soak
Unroasted green coffee beans are soaked in hot water, drawing out caffeine and flavor compounds into the water, creating a flavor-charged Green Coffee Extract.
02
Caffeine Filtered Out
The Green Coffee Extract passes through activated charcoal filters that trap caffeine molecules while allowing flavor compounds to pass through. Caffeine removed. Flavor stays.
03
Flavor Preserved
The caffeine-free extract soaks the next batch of beans. Because it is already saturated with flavor, only caffeine migrates out, leaving the full flavor profile intact.

Swiss Water® vs Chemical Decaf — Why It Matters

What Most Decaf Uses
Chemical Solvent Process
Uses methylene chloride or ethyl acetate to strip caffeine. Residual solvent traces remain in the bean. Cheaper and faster, but strips more flavor alongside the caffeine. Most grocery store decaf is processed this way.

The Coffee — Single Origin Peru

Last Stop Decaf starts with specialty-grade single-origin Peruvian coffee beans that earned a score of 80 or more on the Specialty Coffee Association scale before decaffeination. Peru's high-altitude Andean growing regions produce coffee with a naturally heavy body, low acidity, and rich chocolate and nut character that translates beautifully to a medium roast and holds up exceptionally well through the Swiss Water® Process.

Why Peru for decaf?

Peruvian coffee has a naturally heavy body and chocolate-forward flavor profile that can withstand the decaffeination process without losing its character. Lighter, more delicate origins can lose their most expressive notes through decaffeination. Peruvian coffee's robust, chocolatey baseline makes it one of the best origins for producing genuinely great decaf.

How to Brew Last Stop Decaf

Last Stop Decaf brews beautifully in any method, but we particularly recommend pour-over for optimal flavor clarity.

Brew Method What You Get Our Tip
Pour-Over Clean, clear, full chocolate and almond character Our top recommendation — optimal flavor clarity and smooth extraction
Drip Balanced, consistent, great everyday evening cup Use 200°F water — the heavy body comes through beautifully
French Press Rich, full-bodied, intensely chocolatey 4 minute steep at coarse grind — the heavy body shines in immersion brewing
Cold Brew Smooth, low-acid, naturally sweet evening cold brew 12 to 16-hour steep — mellow acidity makes an exceptionally smooth result

The evening coffee ritual

Last Stop Decaf is purpose-built for the moments when you want the ritual and flavor of great coffee without the caffeine keeping you up. Pour-over after dinner. A French press while reading before bed. Cold brew on a warm evening on the porch. The 99.9% caffeine-free Swiss Water® Process means you get everything you love about specialty coffee, the aroma, the flavor, the warmth, without the consequence.

Frequently Asked Questions

Is Last Stop Decaf completely caffeine-free?

It is 99.9% caffeine-free thanks to the Swiss Water® Process, while maintaining all the enjoyable flavor of single origin Peruvian coffee. A typical 8oz cup contains approximately 1 to 2 milligrams of caffeine, compared to 80 to 120 milligrams in a regular cup.

What flavor notes can I expect?

Rich dark chocolate, almond, and a smooth full-bodied finish. The heavy body and mellow acidity of the single-origin Peruvian beans come through clearly, giving Last Stop Decaf the kind of rich, satisfying flavor profile that makes it genuinely hard to tell it is decaf.

Is this coffee suitable for evening drinking?

Yes, its 99.9% caffeine-free content makes it perfect for nighttime enjoyment. Last Stop Decaf was specifically designed for the evening ritual. Whether you want a pour-over after dinner, a French press before bed, or a cold brew on a warm evening, Last Stop Decaf gives you the full specialty coffee experience without the caffeine keeping you up.

Does Swiss Water® Process affect the flavor?

Less than any other decaffeination method. The Swiss Water® Process preserves more flavor compounds than chemical solvent processes because the Green Coffee Extract it uses is already saturated with flavor, meaning only caffeine migrates out. Starting with specialty-grade Peruvian beans ensures that even after decaffeination, Last Stop Decaf retains a genuinely rich and complex flavor profile.

Are there any chemicals used in the decaffeination process?

None. The Swiss Water® Process uses only water, temperature, and activated charcoal filters, no chemical solvents of any kind. It is certified organic. Most commercial decaf uses methylene chloride or ethyl acetate solvents. Last Stop Decaf does not. Clean coffee, clean process.

Can I brew it the same way as regular coffee?

Yes, Last Stop Decaf brews exactly like any other medium roast coffee. Same grind size, same water temperature, same ratio. The Swiss Water® Process leaves the physical structure of the bean intact, so it grinds, extracts, and brews identically to regular coffee. The only difference is in your cup, and in how well you sleep afterward.
